Marie Mauger was our downstairs neighbor when we summered in Maine. She developed this cake from an apple cake recipe she had. In fact, she didn’t give me the recipe right away because she wanted to make sure of some details.
Marie's Plum Cake
2 c sugar
1 c salad oil
4 eggs
3 c flour
1/2 c orange juice
2 and 1/4 tsp vanilla
3 tsp baking powder
6 fresh purple plums, sliced, with skin on
1/2 c light brown sugar
1 tsp cinnamon
1/2 c walnuts, chopped
1. Mix sugar, oil, eggs, flour, orange juice, vanilla, baking powder, until smooth.
2. Pour 1/2 of this batter into a greased and floured 9x13 pan.
3. Place half of the plums on top of the batter.
4. Sprinkle with 1/4 c brown sugar, 1/2 tsp cinnamon and 1/4 c walnuts.
5. Pour over the rest of the batter.
6. Top with remaining plums, sugar, cinnamon, and walnuts.
Bake at 325° for 1 and 1/4 hours.
