Marri Anne Fedorchak lives across the street from me. One night last week she brought us over a plateful of these delicious and nutritious muffins. They were still warm from the oven! They're great for breakfast.

Marri Anne's Morning Glory Muffins



4 c flour
2 c sugar
4 tsp baking soda
4 tsp cinnamon
4 c coarsely grated carrots
1 c coarsely chopped pecans
1 c sweetened shredded coconut
2 tart apples peeled and grated
6 large eggs
1 c vegetable oil
1 c unsweetened applesauce
1 14-oz can crushed pineapple, drained
2 tsp vanilla

Preheat oven to 350 degrees

1. Into a large bowl sift together the flour, sugar, baking soda, cinnamon, and salt.
2. Stir in carrots, pecans, coconut, and apples.
3. In a small bowl whisk together the eggs, oil, and vanilla. Add the mixture to the flour mixture and stir the batter until it is just combined.
4. Spoon the batter into no-calorie sprayed muffin tins, filling to the top.

Bake for 30 to 35 minutes or until springy to touch, or use a toothpick. Let cool in tins for 5 - 10 minutes and turn out onto a rack.

Makes 30 muffins.

Marri Anne: I usually cut the recipe in half. Marianne also says you could add a cup of raisins to the muffins. However, and I quote: "If you must use raisins, soak them in Amaretto first."
