Here is a "Cook's Recipe." It is for experienced cooks who can make up a recipe for as many servings as they want, without precise ingredient amounts in the directions. Give a Cook a list of ingredients, and she/he will come up with the dish.

This is a good vegetarian entrée.

Ruth's Mediterranean Vegetable Casserole

Use whatever amounts you want:

1 peeled and chopped eggplant
1 sliced zuccini
sliced black and/or green olives to taste
diced bell pepper to taste
small amount of cooked pasta (shells, rotini, whatever)
jar(s) of spaghetti sauce
chopped fresh basil leaves or dried Italian seasoning
1 or 2 fresh tomatoes, chopped into bite-sized pieces
chopped hot pepperocini (optional)
shredded mozzarella cheese

1. Put all ingredients except fresh tomatoes and olives into casserole, and microwave until veggies are barely done.

2. Take out, add fresh tomatoes and olives, cover top with shredded cheese, and microwave until cheese melts.
