These are really meringues, but my mother just called them "cookies." We made them a lot in our house, at any time of year. My recipe is in my mother's handwriting on a yellowed piece of scrap paper. I keep it safe in my old recipe box.
Mint Meringue Cookies
Heat the oven at 375° for 15 minutes.
2 egg whites
3/4 c sugar
1/4 tsp cream of tartar
few drops of green food coloring
a bag of mint chocolate chips
1. Beat egg whites with cream of tartar until stiff. (Don't underbeat.)
2. Slowly beat in sugar and food coloring.
3. Remove from beater. Fold in chocolate chips.
4. Drop by teaspoons on cookie sheet covered with waxed paper.
TURN OFF THE OVEN.
5. Place cookies in oven, close door, and leave overnight.
