Barb Lloyd, who lives on a Lake Michigan beach, got this from her Florida sister-in-law, Tillie. I visit Barb every summer and we go antiqueing and play on the beach.
Mississippi Mud Cake
CAKE:
2 c sugar
1 c butter
4 eggs
3 T cocoa
3 tsp vanilla
1 c walnuts
1 and 1/2 c flour
3 c marshmallows (mini marshmallows work best)
1. Melt sugar and butter together. Beat in eggs and flour. Blend in cocoa, vanilla, and walnuts.
2. Spread this batter into a greased and floured 9x13 pan.
Bake at 375° for 25-30 minutes, or until a toothpick comes out clean.
While cake is hot, place marshmallows on top. Cover with tinfoil, then make icing.
ICING:
1/2 stick of butter
2 T cocoa
3 T buttermilk
1. Place all ingredients into a saucepan and bring to a boil.
Add:
1/2 box powdered sugar
1/2 tsp vanilla
1/2 c nuts
2. Mix well.
3. Remove foil from cake, spread the melted marshmallows over the cake.
4. Cover with icing.
