This is my own recipe. It's a favorite for when we have to go to the airort for house guests. The airport is an hour away. I pop this in the oven, and serve dinner whenever we get back and settled.

Ruth's Easy Pot Roast Dinner

3-4 lb chuck roast
3-4 medium potatoes, quartered
some mini-carrots
some fresh snow peas
1-2 medium zuccini, chunked
2 med onions, chunked
1 tsp ground bay leaf or to taste
several sprigs fresh rosemary.
1 tsp ground sage
salt and pepper to taste

water, boullion, or tomato juice as needed

1. Pile all ingredients into large casserole, small roaster, or whatever you find that fits.
2. Pour over water, boullion, broth, or tomato juice to about 1/2 inch deep on the bottom of the pan.
3. Cover tightly.
4. Put into 225 degree oven and forget about it for 5 hours or longer.

5. Serve. It's your meat, potatoes, and hot veggies in one dish.
