Marianne Jones, a long-time teaching friend, gave me this recipe. It's a rather unusual one, but she says it guarentees a succulent, moist roast.
Standing Rib Roast
a 5-7 lb standing rib roast
1. Place roast in a shallow roasting pan, fat-side up. Salt and pepper to taste.
2. Place in a 375° oven for one hour.
NEVER OPEN THE OVEN!!
3. After one hour, turn off the oven for 3 hours.
4. Before serving, turn the oven on again to 375° for 40 minutes.
