Kathy Berry’s husband, Hoyt, is a member of the Writers Guild. Kathy brought this dish to one of the Guild's parties, and it was also a hit because is was different and delicious. This would be a good holiday dish for a group.
Noodle Pudding
16 oz cottage cheese
16 oz sour cream
3 eggs
1/2 c sugar
1 tsp almond extract
1 tsp vanilla extract
1/4 c melted Smart Balance Buttery Spread
1cup Craisins
1 lb wide noodles, cooked and drained well
brown sugar to taste
cinnamon to taste
1. Mix all ingredients except noodles, brown sugar, and cinnamon together.
2. Add the above mixture to the noodles.
3. Spread in 9x13 pan.
Bake at 350° for 45 minutes.
Top with brown sugar and cinnamon before baking if you like.
Kathy said: “I took some brown sugar and mixed in a few dashes of cinnamon in a small bowl and sprinkled over the pudding till the top was covered with a thin layer.”
