These cookies are another family recipe from my old aluminum recipe box. They're good for everyone. There's raisins for vitamins and iron, and oats for fiber. So you can eat lots of them and feel quite virtuous.
Oatmeal Sugar Cookies
1 c sugar
1 c fat (butter or oleo)
2 eggs
1 tsp vanilla
1 c old-fashioned oats
1/2 c raisins
1 tsp soda
1 and 3/4 c flour
salt if desired
1/2 tsp cinnamon
1. Cream butter and sugar together.
2. Beat in eggs.
3. Add raisins.
4. Sift dry ingredients and stir into mix.
5. Chill for 5 hours or overnight.
6. Roll into balls and place on greased cookie sheet. Flatten each ball with a glass tumbler.
Bake at 375° until edges brown.
note: Rolling each ball in granulated sugar and sugaring the bottom of the tumbler before flattening give a nice finish to the cookie.
