Candy Little, who lives in Kansas, and I exchange emails about cookery and about Maine. She and I were “introduced” through mutual friends; we have never met in person. Her parents lived in Maine not far from where I used to work. So we have lots to talk about.
Candy served these Parmesan Toasts with an antipasto for a cocktail hour.
Parmesan Toasts
1/4 c Parmesan cheese (I used Kraft's)
1/2 tsp dried parsley flakes
1/4 tsp garlic powder
6 egg roll wrappers
3 T butter or stick margarine, melted
Preheat oven to 400°.
Line baking sheet with parchment paper.
1. Combine the first 3 ingredients with a fork.
2. Cut each wrapper in to 4 strips.
3. Place strips on parchment.
4. Brush each strip with melted butter.
5. Sprinkle cheese mixture on each strip.
Bake about 5 minutes until light golden brown. **Watch carefully, as they burn easily.
