Judy Youngdoff from Kansas sent this recipe and says she makes it a lot in the summer.
Pasta with Parsley
1 c chopped parsley
1/4 c light olive oil
1/2 c water
1 T onion powder
1 T lemon juice
2 T Dijon mustard
1/4 tsp salt
1/4 tsp pepper
16-oz pckg fusilli pasta, cooked
1. Combine all ingredients except pasta in food processor or blender.
2. Add sauce to cooked pasta and toss. Garnish with parsley and tomato.
Judy says to toss in a bit of chopped basil if you have it.
