We had a gang of friends in for dinner. Phyllis Bollinger brought this for a salad. It also works well as a dessert. It's attractive, and a quickie to make. The best thing is that it keeps well in the freezer, and can be used over a period of days.

Phyllis's Frozen Salad

1 pkg of instant pistachio pudding
1 20-oz can of crushed pineapple, with juice
1 8-oz Cool Whip
3/4 c halved maraschino cherries
chopped nuts to taste


1. Mix, spread in a 9x9 pan, and freeze.
2. If desired, decorate top with cherry halves and nut sprinkles.
3. Remove from freezer and let stand a few minutes before cutting into squares.
