Poutine
There's a restaurant in Whitehorse,Yukon Territory, called The Talisman. We loved going there because of the "different" menu. It's run by a gal who is a member of the Wolf clan of area Indians.
On her menu she offers "poutine." It's a French-Canadian dish that you can even get at McDonald's and Burger King in French Canada (like Montreal and Quèbec.)
There are a lot of local variations, but basically poutine is french fries in a bowl, with cheese curds or shredded cheese on top of the fries. Then a thick brown gravy is poured over the whole thing. The gravy has to be hot, hot, hot. Hot enough to partially melt the cheese (and disguise all the grease in this dish).
