Many years ago, back in the late 70s, I gave large holiday sit-down dinners for friends and family. My mother-in-law, Dorothy Williams, was a professional cook. She helped with the cooking, and also gave me recipes to use. Queen Anne Potatoes was one she passed on to me. I thought the dish was special back then, and have served it many times for many occasions since.
Queen Anne Potatoes
Preheat oven to 350°
buttered 2-qt casserole dish
6 medium potatoes, cooked and mashed
1 c sour cream
1 c small curd cottage cheese
1/4 c butter, melted
2 T butter, melted
chopped fresh chives
1. Mix the warm potatoes, sour cream, cottage cheese, and 1/4 c butter.
2. Put mix in the casserole dish.
3. Sprinkle the chopped chives on top.
4. Pour the 2 T of melted butter over all.
Bake at 350° for 45 minutes.
