This is a "what you have on hand" speedy meal. Tossing in a few sliced olives will dress it up, too. Since my husband and I are olive freaks, olives go into practically all of my pasta sauces. Ruth
Quick Pasta Meal
4-oz any pasta
1/2 medium onion, chopped
1 clove garlic, chopped
1 can diced tomatoes
Chopped kale, spinach, or other greens to taste
1 can cannellini beans, drained
1 T dried Italian seasoning
hot pepper flakes (optional)
1. Put the pasta on to cook.
2. While it cooks, sauté the onions and garlic.
3. Add chopped kale or spinach to wilt.
4. Then stir in the tomatoes, the white (cannellini) beans, and some hot-pepper flakes.
5. Serve immediately over the cooked pasta.
