I don't have a clear provenance on this recipe. My only note on it was that it is from "Beverly's kitchen." I must have got it from a Scottish friend who had a friend named Beverly.
A "pudding" in Great Britain often just means "dessert." It also can mean a soft sweet bread or cake, which is what this recipe is.
Microwave Scottish Pudding
1/2 pint water (1 cup)
4 oz white sugar (1/2 cup)
2 beaten eggs
1/2 lb plain flour (1 and 2/3 cups)
1 T mixed spice
1 T cinnamon
1 teas bicarb soda
1/2 lb margarine/butter
1/2 lb sultana or currants
1/2 lb raisins
1 T treacle (honey)
1. Put into a large pan, water, spice,cinnamon, fruit, sugar, margarine, treacle. Bring to a boil then simmer for 1 minute only.

Stir in flour, bicarb, and eggs. Mix very well.

Line a pudding basin (china or glass mixing bowl)with enough cling wrap to go over the sides.
4. Pour in pudding. Do not cover the mixture. Microwave for 6-9 minutes.
5. When cooked, store in wrap. Or remove the wrap if you do not want the skin to form on the dumpling.
