I got this recipe from the label of a cilantro plant I bought at my local super market, Publix. It was from Try-Foods Intl., Apopka, Florida. I have since added my own little fillips to the basic recipe, as we all do. I add chopped green pepper, and lots of cumin and cilantro. Since I do not keep Jalapeno peppers on hand, I use the hot pepperocini you can buy in a jar in the pickle section of your market. Them I do always have on hand.

Salsa Fresca

2 tomatoes, peeled and chopped
1/4 c onions, chopped
2 T fresh lime juice
1 T Jalapeno pepper, chopped (or hot pepperocini)
2 T fresh cilantro, chopped (I use more!)
1 T olive oil
1/4 t cumin, ground (I add more.)
salt and pepper to taste

Mix all ingredients at least an hour before serving.

Will keep in the refrigerator 3 or 4 days.
