We packed up a couple of steaks and went up to Art and Judy McCracken's place today. Art grilled the steaks, and Judy made this delicious side dish. I got the recipe from her right away!
Judy's Scalloped Corn
1 16-oz can whole kernel corn drained
1 16-oz can cream style corn
2 eggs slightly beaten
1/2 c melted butter or margarine( 1 stick)
1 c sour cream ( I used Lite today)
1 8-oz package corn muffin mix
1 c shredded cheddar cheese
1. Mix all ingredients.
2. Pour in ungreased casserole.
3. Sprinkle cheese on top.
Bake @ 350 degrees for 15 minutes or until done.
