These are meant to be rolled fairly thin, and baked until the edges are a light brown. They are more crispy than your traditional sugar cookie. My grandmother cut them into circles and sprinkled cinnamon sugar on them, and then put half a nut meat in the middle of each cookie. My kids and I like them best with frosting on them. You can also paint them with egg white and sprinkle them with sugar. Of course, for the holidays, they can be cut into Christmas shapes and decorated with colored sugars or icings, too. Ruth
Southern Tea Cakes
4 c flour
2 c sugar
4 eggs
1 c butter
1 tsp soda
1 tsp vanilla
1. Beat eggs and sugar together.
2. Add very soft butter, soda, vanilla and mix.
3. Work in flour.
4. Roll out on floured board and cut into shapes.
5. Bake at 375 degrees.
