I had some feta cheese to use up one night, and put this casserole together. It turned out to be a keeper.

Spinach and Feta Casserole

Grease (or use spray) a 1 and 1/2 qt casserole
Preheat the oven to 400 °

3 eggs
1 pkg chopped frozen spinach, drained and squeezed (Save the juice for soup-making.)
1/4 c flour
1/2 tsp baking powder
4-5 oz crumbled feta cheese
1/4 c of chopped cooking onion
1/4 c panko crumbs (or more, to taste)

1. Beat eggs until light.
2. Mix the baking powder and flour together, add to eggs and mix well.
3. Mix together the spinach and feta cheese.
4. Spread the cheese and spinach mixture over the bottom of the casserole.
5. Pour the egg mixture over all.
6. Sprinkle the panko crumbs over the top.

Bake for 30 minutes, until edges start to brown and middle is firm.

The Spinach Feta Casserole is a good dish for diabetics. Above is a diabetic meal.

This is in a motel—somewhere. That's my diabetic husband.
The menu is half of a large Wendy's chili for each, an apple each, a sugar-free cookie each, and hot black tea (and a few soda crackers).
