A few years ago, Jane Fisher passed a Red Hat Cookbook she didn't need any more on to me. Jane started my Red Hat Chapter nine years ago. She has now moved from Florida to North Carolina.

While looking through the cookbook a while back, I came upon three recipes in Jane's handwriting tucked among the pages. I emailed her about using the recipes, and she said to "go ahead!" There was this one for String Pie, one for Sour Cream Muffins, and one for Corn Casserole.

String Pie

Heat oven to 350 degrees.

9x 13 pan. Do not grease it.

1 lb ground beef
1/2 c chopped onions
1/4 c chopped green peppers
15-oz jar of spaghetti sauce
8-oz spaghetti, cooked
1/3 c grated Parmesan cheese
2 beaten eggs
1 c cottage cheese
1/2 c shredded mozzarella cheese

1. Cook beef, pepper, onion in skillet. Drain.
2. Stir in spaghetti sauce. Mix well.
3. In a large bowl, combine cooked spaghetti, eggs, and parmesan cheese.
4. Spoon the spaghetti mixture over the bottom of the pan.
5. Pour the spaghetti sauce mixture over it.
6. Spread the cottage cheese over the sauce mixture.
7. Spread the shredded mozzarella cheese over the top.

Bake for 20 minutes.
