This recipe is from my kitchen. It's one of my husband's favorite dishes.

Ruth's Summer Squash Curry

1 med yellow summer squash, sliced
1 med zucchini sliced
1 med onion, sliced and in rings
half of a tomato, chopped
half a green bell pepper, sliced thin
curry powder or paste to taste
1/2 cup water

1. Sauté the onion and pepper a few minutes in 0 calorie spray.
2. Add the squash and sauté for 3 minutes, turning frequently.
3. Add tomato, water, and curry.
4. Cover and cook until vegetables are soft, stirring frequently to distribute the curry sauce.

Serve as a side, or on rice for an entrée.
