Summer Succotash
Serves 12
2 green peppers, chopped
4-5 ribs celery, chopped
2 medium onions, chopped
2 cans tomatoes
2 cans creamed corn
3/4 lb bacon, diced, fried, drained (Reserve bacon fat.)
2 8-oz pkgs green spinach
cooked noodles or spaghetti if desired
1/2 lb cheddar cheese
1. Brown vegetables in bacon fat and drain.
2. Cut cheese in chunks and mix with other ingredients.
3. Put in large casserole and bake 1 hour at 325-350°.
