Sweet Potato Pie is a southern recipe, without a doubt. Almost any restaurant in the south has it, and everyone makes it. My mother made both squash and sweet potato pie in place of pumpkin pie. They are sweeter and have more depth of flavor, she said. In fact, squash and sweet potatos can be interchanged in this basic recipe.
Sweet Potato Pie
one 9 inch unbaked pie crust
1 lb of sweet potatoes, cooked and peeled
1/2 c butter or margarine, softened
1 c white or brown sugar
1/2 c milk
2 eggs
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1 teaspoon vanilla extract
1. Break apart sweet potatoes in a bowl.
2.
Add butter, and mix well with mixer.
3.
Stir in sugar, milk, eggs, spices, and vanilla.
4. Beat on medium speed until mixture is smooth.
5. Pour filling into an unbaked pie crust.
Bake at 350 ° F (175 ° C) for 55 to 60 minutes, or until knife inserted in center comes out clean. If crust starts to get too brown, cover edges with aluminum foil.
