Toby Weber is in my Writers Guild and my Red Hat Chapter down here in FL. For our annual Red Hat tea in January, she brought this salad. It was so good!!! So I asked her for the recipe. Here’s what she wrote.

 

“Glad everyone liked the salad.  On a break between meetings so here's a quick recipe run down.  Don't have specific amounts... I just add ingredients as they occur.”

 

Toby's Greek Pepper Salad

 

1. Chopped up veggies including red, green, orange and yellow peppers, celery, cucumbers, scallions, grape tomatoes (halved)

2. Chopped up Greek/calamati pitted olives

3. Feta cheese (a whole lot, flaked)

4. Greek or vinagrette dressing ( I use Ken's Greek dressing or my own which is 1/2 cup olive oil, 1/3 cup red wine vinegar, 1 t oregano, 1 t salt

5. Spices including pepper and oregano or Italian spice mix to taste

6. Mix all together, chill, serve

 

Easy, just a lot of chopping.
