I grew up with tuna patties. They were a family staple, cheap and nourishing. Serve them with chili sauce, chutney, or relish either on the side or on the patties.

Tuna Patties

12 oz of canned tuna fish, drained and flaked
2 eggs, slightly beaten
1 T flour
salt and pepper
a pinch of ground sage
2 T chopped onion

2 tsp olive oil in a frying pan, heated

1. Mix all ingredients together.
2. Drop by spoonsful into hot frying pan. Flatten gently to make a pattie.
3. Fry until browned on one side. Be sure they are browned before trying to turn them.
4. Turn them over very gently (use a pancake turner), and fry again until browned.
