I found some soy-based pepperoni at the grocer's a couple of years ago. It was/is spicy and tasty. Pizza! A favorite dish we had avoided for several years for health considerations, was on the horizon.

This is my way of making it. Pizza being what it is, you can vary it indefinitely.

Vegetarian Low-Calorie Pizza

for one pizza

1/2 package of soy-based pepperoni slices
1 whole wheat pita loaf
1/3 cup of commercial tomato pizza sauce
1/4 c each chopped onion, green pepper, sliced mushrooms
1/3 c soy-based shredded cheese
a few sliced green olives (to taste)
a few sliced Greek kalamata black olives (to taste)

1. Steam the onion and green pepper until soft.
2. Lay pita on a microwave safe dinner plate, and spread with the pizza sauce.
3. Lay pepperoni slices, sides touching, all over the pita.
4. Sprinkle the onions, peppers, and mushrooms over the pizza.
5. Pile cheese shreds all over the pizza.

Place the plate in the microwave. Cover with a microwave cooking cover or a microwave safe bowl. Heat on high for 1 and 1/2 to 2 minutes, until the cheese melts and the pizza is hot.
