We are packing up to leave our summer apartment in Maine and return to Florida. I had a can of walnuts to use up. I also had one Pillsbury pie crust in the frig to use, and just one cup left in a jar of Light Karo Syrup. (Light means the color, not the sugar content.) So I began putting things together to see what would happen. I substituted artificial sweeter for the usual sugar. That cut the sugars in half, better for diabetics. The results were very good. I was pleased.

Lite Walnut Pie

1 stick oleo
1 cup sugar equivalent, such as Sugar Twin or Splenda
1 cup white syrup
1 tsp vanilla
4 eggs
1 and 1/2 c walnuts

1. Mix and heat the first 4 ingredients until they are fully dissolved. Do Not Boil! Then let it cool for about a half hour.
2. Add 1 tsp vanilla
3. Beat the 4 eggs. Add the cooled syrup mixture to them.
4. Pour into the unbaked pie shell.
5. Top with the walnuts

Cover pie crust edges with foil. Bake at 400° for 40 minutes

Remove the foil and turn the oven down to 350°. Bake for another 10 to 15 minutes or until a knife inserted half way between the crust and center comes out clean.
