Some years ago our then neighbor, made a Welsh Plum Pudding every Christmas. When served, this butter sauce was pour onto each slice. The sauce recipe came from her mother, who was raised in Wales.

Butter sauce, sometimes called hard sauce, is not only for Christmas. It's a good sauce for cakes and gingerbread any time of the year.

Welsh Butter Sauce
(Ymenyn Saus)

1/4 c oleo
1/4 c flour
1/2 c sugar
1 c milk
1/2 tsp vanilla

1. Melt oleo.
2. Remove from heat, add flour and blend well.
3. Put back on heat and cook until bubbles form.
4. Remove from heat. Add milk gradually.
5. Cook until thick, then add sugar and vanilla.

Nancy: I add more milk because we like a thinner sauce with our pudding.
