There is no history to this recipe, other than it is something I make quite often. It is satisfying, low calorie, free of cholesterol and fat.

Ruth's Zucchini Chili

2-3 lbs zucchini, cut in small pieces
1 14-oz can diced tomatoes
1/2 green pepper, chopped
3 stalks celery, chopped
1 medium onion, chopped
1 14-oz can dark red kidney beans, drained
1 T chili powder or to taste
1 T cumin
1/2 c. fresh cilantro, chopped
2 tsp ground cinnamon OR chocolate powder

1. Steam onion, green pepper, celery in microwave steamer for 8 minutes on high.
2. Steam zucchini in microwave steamer 8 minutes on high.
3. In a large saucepan, stir the rest of the ingredients into the tomatoes, and begin heating.
4. Add the steamed vegetables, stir well.
5. Simmer for at least 20 minutes.
6. Serve with a dollop of light or fat free sour cream.

You can also put all the ingredients into a saucepan and simmer until the vegetables are cooked, adding tomato-vegetable juice as needed.

Vegan: Leave off the sour cream.
